In an earlier post I mentioned how we celebrate all the birthdays at work and last month I made carrot cake for another one of the guys on our team (April is a big month for us). I, personally, don’t like carrot cake and I’d never made one before, but I do love trying new things. I came across this recipe on and I used all of the updates. The cake was a hit.

Carrot Cake

  • 4 eggs
  • 3/4 cup canola oil
  • 1/2 cup applesauce
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 cups grated carrots
  • 8 oz crushed pineapple drained
  • 1 cup pecans


  • preheat oven to 350 degrees Fahrenheit. Prep 13x9in pan
  • mix together flour, baking soda, baking powder, salt, cinnamon, and nutmeg
  • beat together eggs, oil, sugar, applesauce, and vanilla extract
  • add flour mixture to eggs, oil, sugar, and vanilla extract and mix together
  • stir in carrots and crushed pineapple, fold in pecans
  • pour into prepared pan and bake in oven 40-50 minutes
